Pumpkin Fritters

This is very easy to make and is a favourite amongst my friends from abroad.

  • 2 cups boiled pumpkin (no sugar added)
  • 2 cups flour
  • 10ml baking powder
  • 2 eggs
  • 100ml soda water
  • 200ml brandy (optional)
  • 5ml vanilla essence
  • pinch of salt

Mix the eggs, soda water, brandy, vanilla essence and salt together.

Sift the baking powder with the flour and mix into the pumpkin.

Add the liquid mix and beat lightly

Fry in shallow pan in sunflower / canola oil until golden brown both sides.
